The reason is that kosher salt and table salt are not interchangeable on an equal measure to equal measure basis. The difference comes from the size of the individual grains. The grains in kosher salt are lighter, flakier, and much larger crystals than table salt. The crystals in fine table salt are more uniform in size and much smaller. This means a teaspoon of kosher salt will actually be less salt than a teaspoon of table salt. In fact, the table salt will amount to about twice the salt in weight of the kosher salt.
